  • 1 ½ cups (250 g) fresh strawberries, sliced
  • ½ small red onion, thinly sliced

  • ½ cup (60 g) candied pecans or walnuts
  • 1 tablespoon chia seeds or poppy seeds (optional)

Dressing

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Make the Dressing:
    In a small bowl or jar, combine olive oil, balsamic vinegar, Dijon mustard, and honey. Whisk or shake until fully emulsified. Add salt and pepper to taste.
  2. Prepare the Salad Base:
    Wash and thoroughly dry spinach and strawberries. Slice the strawberries and red onion thinly.
  3. Assemble the Salad:
    In a large bowl, layer the spinach, strawberries, and red onions. Top with crumbled feta cheese and candied pecans.
  4. Dress and Serve:
    Drizzle the dressing over the salad right before serving. Gently toss and sprinkle chia seeds or poppy seeds on top if using.
